  • Set your instant pot to saute and wait until it reads “hot”
  • Pour 3 tbs of cooking oil into the pressure cooker and make sure that it remains “hot”
  • Now place your steak pieces into the hot oil and allow it to cook for 2-3 minutes per side
  • When the steak is brown, remove the pieces and turn the instant pot off.

You can choose to bake Swiss Steak, but keep in mind that to get the tender results you’re looking for, the bake time will be significantly longer than if you were to cook it in your Instant Pot.

To make this Swiss Steak in your oven, you'll need to saute the steak on your stovetop and then transfer it and the other ingredients to an oven-safe dish.

Then cover and bake for 1 hour at 350 degrees.

What type of Steak is best for Swiss Steak?

Swiss Steak is traditionally made with thick pieces of beef round or chuck shoulder.

You can also use boneless beef chuck or bottom round. You can use thick steak or thin it out as you tenderize it through a process called Swissing (which is where the dish gets its name from.)

Do you grow Tomatoes in your Garden?

I always have an abundance of tomatoes from my garden. You can substitute fresh diced tomatoes for the Stewed Tomatoes in this Swiss Steak recipe.

Wash tomatoes and remove skins by dipping in boiling water for 45 seconds. Skins will peel right off. Then dice and substitute with all the juices in this recipe. YUM! I do like to add a little Salt and Pepper too.

FAQs

How do you tenderize steak in a pressure cooker? ›

Tips and Notes for Perfect Instant Pot Steak

The key to tender beef in a pressure cooker is not just the cooking time but also the natural release of pressure instead of quick release. This allows the meat fibers to relax and retain moisture, making them tender and juicy.

Do I need to brown meat before pressure cooking? ›

Brown it

Pressure cooked food doesn't brown so it's worth doing this at the start of cooking before adding liquid and putting the lid on. Meat looks and tastes more appetising with a little browning. Onions, garlic and spices also benefit in the flavour stakes from pre-cooking.

What is the best meat to cook in a pressure cooker? ›

Best Cuts for Your Pressure Cooker/Instant Pot

You can cook any cut in a multi-cooker, but we recommend those from the chuck and round. These beef cuts typically take hours to prepare using braising and roasting methods.

Does cooking beef in pressure cooker make it tender? ›

The pressure cooking process breaks down tough meat, making it tender. Put the lid back on, seal the pressure cooker, and cook at high pressure for another 10 to 20 minutes.

What liquid will tenderize steak? ›

Wine and beer contain acids and tannins, which are both natural tenderisers. Beer/wine will also add great flavour to your meat dishes. Method: Soak beef in beer or wine for at least an hour before cooking.

How do you keep meat moist in a pressure cooker? ›

While you may cover meat almost completely for a conventional braise, use just enough liquid for the cooker to reach pressure – during pressure cooking the meat will release it's own juice and braise in that flavorful liquid, instead.

Do you season meat before pressure cooking? ›

Heat oil in the pressure cooker and sear the meat on all sides. Season the roast, then add the broth, sauce, and onion. Seal the lid. Reduce the heat to low and cook on full pressure for 30 minutes.

How much water do I put in a pressure cooker for meat? ›

Pour in at least two cups of water; use 1 to 2 cups more if the beef is a tough cut or to reach the minimum amount recommended by the pressure cooker's manufacturer. Seal the lid and bring the cooker up to full pressure over high heat. Reduce the heat to low, maintaining full pressure, and cook for 1 1/2 to 2 hours.

Can you overcook meat in a pressure cooker? ›

Steam penetrates food easily under pressure. So connective tissues in cubes of beef for soups or stews soften in 15 minutes or less, and a pot roast will be medium-rare in 30 minutes. Be sure to follow instructions carefully; at this speed, it's easy to overcook things in mere minutes.

How long do you cook 2 lb of meat in a pressure cooker? ›

For a whole roast: Cook on high pressure for 20 minutes per pound of meat. For small chunks: Cook on high pressure for 15 minutes per pound of meat.

Why is my beef still tough in the pressure cooker? ›

To prevent a chewy beef steak, you need to avoid using too much high-pressure heat. Of course, start with pressure cooking your roast (that's why you're using the Instant Pot anyway), but keep that high-pressured phase to a few minutes only.

Does meat need to be submerged in a pressure cooker? ›

Nope, often you will steam things in a pressure cooker - there just needs to be water/liquid.

Is it better to slow cook or pressure cook beef? ›

Slow cookers are much better for cooking root vegetables and tough cuts of meat because the long, low-temperature cooking process is great for adding moisture and breaking down fat. Pressure cookers can get hot enough for meats and vegetables to brown in them when cooking, but slow cookers can't.

What happens if you leave meat in pressure cooker too long? ›

Unfortunately, once you overcook a piece of meat in the pressure cooker, there's no going back. You'll be left with a pile of dry, crunchy, tasteless fibers and no amount of additional pressure cooking is going to put that moisture back into the meat. Earlier, I explained how ingredient size affects the cooking time.

What is the easiest way to tenderize steak? ›

Using a meat mallet (or kitchen mallet) to pound steaks helps soften and tenderize the meat. Simply place the meat in between pieces of plastic wrap or wax paper and pound it prior to cooking. If you don't have a meat mallet, you can also use a heavy kitchen tool such as a skillet, saucepan or rolling pin.

How is tough meat made tender fast inside a pressure cooker? ›

Pressure cooking is particularly effective at tenderizing tough cuts of meat. As the pressurized steam penetrates the meat fibers, it breaks down collagen and connective tissues, transforming tough cuts into melt-in-your-mouth delicacies.

Does meat get softer the longer you pressure cook it? ›

All Cuts of Meat Can Become More Tender in a Pressure Cooker

This is where a pressure cooker really starts to shine.
