  • 1 (15 ounce) can white beans, undrained
  • 12 cup vegetable juice or 1/2 cup tomato juice
  • 2 medium carrots, scrubbed, sliced into 1/2 inch thick slices
  • 2 celery ribs, cut into fourths
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon basil, crushed
  • 1 teaspoon oregano, crushed
  • 2 -3 frozen boneless skinless chicken thighs
  • 8 ounces smoked turkey or 8 ounces chicken sausage
  • salt and pepper, to taste

directions

  • Combine the beans, tomato juice, carrots, celery, garlic, bay leaves, and spices.
  • Cut the sausages in half lengthwise and slice, stir into beans.
  • Place the frozen chicken thighs on top of the bean mixture.
  • Cover; cook on low-heat for 8 to 10 hours.
  • Remove bay leaves, stir, adjust seasonings as desired and serve.

  1. You had me up to the "chicken sausage" . Recent mega-studies combining previous studies on diet and cholesterol show little if any direct relationship between dietary and blood cholesterol. No call for fake sausage.

  1. Wow, this was wonderful. I wasn't able to get smoked sausages, so used fresh herb & garlic chicken sausages. I used a full can of tomato puree instead of juice. Other than that I followed the recipe. It was easy to put together at 5am & the aroma when we walked in the door was fabulous. Served with crackers. Thanks Paula for this keeper.

  2. I made this in my 6 qt. crock pot, but since there is only me - it was fine. I used Kielbasa and Chicken breasts - because that is what I had on hand. Really, really good. Thanks for sharing. Will definitely make it this winter.

  1. I doubled the carrots and used all the smoked turkey sausage that came in the package. I'm sure it was more than 8 oz. but not sure it was 1 lb. I also doubled the chicken thighs so the entire top of the veggie/sausage layer was covered w/ thighs. I wasnted enough for 5-6 servings. I kept the beans and V-8 juice and the other ingredients the same. Turned out very nicely.

  2. I have a 6 quart crock pot so I doubled the recipe and shared with my family. I used V8 juice, 2 chicken breasts instead of thighs, and Eckrich smoked sausage because I could not find smoked turkey or chicken sausage. This was so good and perfect for the cold weather we are having. Served with sourdough bread and enjoyed a wonderful meal. Thank you Paula for sharing! Made and reviewed for the Zaar Stars Tag Game.

  3. This was really good. I used one large boneless skinless chicken breast instead of thighs and with the sausage, that was plenty of meat for us. I also added a little salt, but think it would be fine without. Even though the weather is starting to get warm, I will definitely make this again. I love that it cooks all day while I have fun.

In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
